Dinner with Friends

Just got home from a later dinner with our friends Rocky and Kristen. They are amazing. Kristen is a nurse and Rocky is a paramedic. They are a beautiful couple who Shaun and I really enjoy hanging out with.
We decided to go to Chilis because our favorite Indian place closed early. Chilis was great. I ordered the soup and salad. It was pretty good, but I am being good.

We talked about school, work, Las Vegas, and other fun stuff.

Recently Shaun and I have been looking for a couple to become best friends with because its hard day in and day out hanging out with our single friends. Yes, they are also amazing and we love them, but there is something different hanging out with another married couple, a couple that knows what it is like to be young and married and why you make the choices you make. There is something comforting knowing that you are not alone.

I hope that we can hang out with these two wonderful people more often.

I also went to the Zumba class tonight (before dinner). It was great! I love the instructor. She is amazing.

Right now, as we speak, I am looking at my husband in his boxers, stretching in front of the DVD's trying to pick out a movie to watch while falling asleep.... this is his nightly ritual. It will probably take him another 20 minutes to decide what he wants to watch. I love him for that. So thoughtful... even with the smallest of tasks.

The Dragging Day!

Today is one of those days that you just cannot stand. I want to go home but I realize I must stay at work and drag it out.
So, lets look on the good side.
I had a wonderful lunch today.
1. Spinach salad with sprouts, tomato, feta and carrots.
2. Grilled tilapia with Jamaican Jerk marinade... delicious.
3. Wasa cracker... yum.
Of course I do not eat like this every day during lunch because I usually do not have the time to cook to bring to work... but this is the exact reason why I started this blog. I need to realize the importance of taking the time to take care of myself and my husband FIRST.

Tonight my husband and I are going to go to Malhis... a wonderful Indian restaurant.
We try to go here on a regular basis because Indian food is one of our favorites and we just can't live without it.

Shaun (my husband) is having a friend come over tonight to "Jam"... this is what men refer to when they get together and play music. I am glad he is starting to get back into playing the bass guitar. He is so good at it and for a while he stopped playing.

I hope that tonight is a wonderful night because work is GRUELING!

Spinach Pesto Pita

After a nice gym workout I went grocery shopping. I bought some wonderful new foods. I decided to make a simple but DELICIOUS meal for my husband and me. I made Spinach and Pesto Pita sandwiches.
This is what you need:

Whole wheat pita
Pesto sauce
Fresh spinach
Tomato
Avocado
Sprouts
Feta Cheese
Panini Press (Optional, you can use a pan)

Wash and cut your tomato,
Wash the sprouts and spinach,
Cut the avocado into slices,
Spread about a tbsp of Pesto Sauce onto the inside of the wheat pita,
Add the spinach, avocado, tomato and feta
Then you can either grill it in a non-stick pan (no oil or butter needed)
Just grill until it is lightly brown on both sides.
If you have a Panini Press you don't have to worry about the insides falling out because the press holds it all together.









I added strawberries on the side to make a nice light side dish and TADA!!!!





My husband LOVED them. When he was finished I asked him if he enjoyed the meal. He said it was great. I asked if he wanted something else from me... he gave me a little smirk... and I said "FOOD", he said "Oh Darn, I thought you meant something else". He is adorable. This meal is simple and delicious and is really healthy! Try it!


I told him I started this blog to become a better wife. He laughed at me... but I think he secretly likes it, especially because I am sure I am not the best wife.. by any means.




My adorable kitchen companion, Sable, would not leave me alone in the kitchen. She is hilarious. I love her. This is her being a goose.






Oh, and P.S., while cooking I also put in a load of laundry and fed the dog... look at me go... I am on a role. The house is still a mess... that can wait until tomorrow.

Iced Coffee and Doctor's Appointments

The Coffee Bean is great. They serve the strongest Iced Coffee I have ever tasted. Its actually fantastic. Just enough fat-free milk, just enough Splenda (1 packet), and a bold coffee flavor. Just what I need for a mid-day perk.
Today by boss, Greg, asked me if I could run and get him a burger. I have worked here for three years in October and he has never asked me to go on a food run for him. I am more than willing to do so because I adore my boss and would do practically anything for him. He is nervous to ask me because he feels it is inappropriate, but we are pretty close and I tell him to cut it out and give me the money to go grab him something. The burger and fries made my car smell irresistible and I had to stop myself from reaching inside the little brown bag to sneak a few french fries. Over the last three months, exactly, I have lost a total of 19 pounds and I am not going to go back to that spot. So, no fries for me.

Does coffee make you heart rate increase dramatically? I am going to the my doctor's office today for a yearly exam and I am wondering if the strong coffee will make my blood pressure rise. I really hate going to the doctors office. I have not had a physical since I was 13 or 14 and need to have a blood test and all the other junk to make sure I am in pristine condition. I am nervous, although I have had a needle poke my skin at a rapid speed for over an hour (tattoos), I still get the chills when I think of having blood taken out. There is something about blood coming out of the body I just do not appreciate. Blood is supposed to stay inside of the body... except in rare occasions, like womanly functions.

Tonight my husband, Shaun, and I will go to the gym. I look forward to a good sweat. It makes me feel like I actually did something worth while. Making my heart beat super fast and feeling the sweat drip down my back and forehead is very rewarding.

After the gym I am going to go grocery shopping and buy some beautiful foods to make a delicious meal for my wonderful husband. I am not sure what I am going to make yet, but when I find out I will let you know and will post the recipe and the results of the meal.

I am not sure how this blog business is going to work, but it at least helps me to release my thoughts and feel like I have a hobby.
